Grilled Veggies: Spicing Up your Summer Meals

Summer is upon us! And that means a lot of things: warm sunshine, beach days, and grilling. Lots of grilling. 

When we think grilling we usually think hamburgers, steaks, chicken. While that’s all fine and dandy (as long as you are getting the right meats) we want to talk about vegetables on the grill. Who knew throwing veggies on the grill could make them taste so delicious?!


Here are some of our favorites that we will be cooking up this summer: 

  1. Corn on the cob: Easy, breezy. Shuck the corn completely, add a bit of butter (or ghee) and Himalayan sea salt. Place it on the grill for about 10 minutes, rotating it every couple of minutes. And voila - a delicious summer staple! 

  2. Asparagus: get your grill HOT. Season the asparagus with some olive oil, S&P. Grill until tender and charred, about 4 minutes. Bingo Bango! A prefect summertime side dish. 

  3. Brussel Sprouts: Who doesn’t love a baked Brussel sprout? But who knew you could throw them on a grill for a delicious summer twist? Try putting the Brussel sprouts on metal skewers (think shish kabobs). Add some olive oil, vinegar, red pepper flakes… whatever inspires you. Cook on the grill about 10 minutes. For a little extra flavor, season with some shredded parmesan after cooking. 

  4. Grilled Romaine: coat your romaine wedges with olive oil. Pop on the grill - 2 to 3 minuets per side - then add your own homemade Caesar dressing, tomatoes, avocado and grilled chicken pieces for your twist on a Caesar salad with chicken!

  5. Cauliflower Steak: Let’s face it. Cauliflower can be… boring. But throw it on a grill, add some seasoning, and you’ve got yourself a SNACK. Cut the cauliflower head into thick slices (hence the “steak”). Season with olive oil and S&P on both sides. Throw on the girl - 2 to 3 minutes per side. Then transfer the cauliflower to a grill-safe pan and cook for about 20 more mins, until tender. 

So there you have it! 5 SIMPLE ideas for upping your grill game this summer. Grill these up with some grass fed hamburgers or organic chicken breasts, a tomato and mozzarella salad and fruit salad with a homemade whipped cream for dessert and you have yourself the PERFECT summer meal! At least in our book. :)
