Kale + Cabbage Pesto Crunch Salad

Lacinato Kale

Like other kinds of kale, Lacinato kale has tons of vitamin A, vitamin C and vitamin K - but with a milder, sweeter taste that's more palatable.

Red Cabbage

Red cabbage is another member of the cruciferous or Brassica family (other members include kale, cauliflower, broccoli, Brussels sprouts to name a few). These vegetables have sulfur-containing compounds called glucosinolates which give them their bitter flavor and also reduce inflammation and fight bacteria. The bright red color is from a flavonoid called cyanidin which functions as an antioxidant!

Pasture-Raised Eggs

When it comes to the egg not all are created equal! Not only can you feel good that chickens producing pasture-raised eggs are being treated humanely, the nutrients in these eggs are far more beneficial. According to Vital Farms, in comparison to a conventional egg, pasture-raised eggs contain:

Ingredients

Directions

First tear your kale and romaine lettuce into bite-sized pieces (be sure to remove the tough stems) , then slice some red cabbage into thin strips and place in a bowl. Next add in some chopped pepper and avocado. Mix to combine.

Drizzle some salad dressing over the bowl and add a dollop of pesto. Lastly, fry the egg in a skillet and place on top. Make sure to keep the yolk slightly runny so that it can mix in with everything!

With a fork and knife chop everything up and mix together and enjoy!
