Coconut Bliss Cookies

These are a favorite in our household because not only are they so simple to make (just see below!) they are so delicious. A perfect treat that won’t leave you feeling guilty if you eat the whole batch!

Ingredients:

2 cups shredded unsweetened coconut

1 cup almond flour

1/2 cup maple syrup

7 tbsp coconut oil

1 tsp vanilla extract (you can also sub almond extract)

Instructions:

Mix dry ingredients. Add in wet ingredients. Roll into small balls. Bake on 400 degrees for 20-25 minutes. Optional bonus: Once the cookies have finished baking, dip them into some melted dark chocolate and let dry. Voila!
