Chicken Strips
Ingredients:
2 cups Organic corn flakes
1 lb. Boneless skinless chicken - breasts or thighs
1 tbsp. Turmeric
1 tsp Ground black pepper
1/2 tbsp. Salt (Himalayan pink salt, or Celtic grey sea salt if possible).
Coconut oil cooking spray
*Additional seasonings of your choice- suggestions: Montreal pre-mixed seasoning, ground ginger and curry powder for Asian inspired flavor, or ground garlic powder and onion powder, or even smoked paprika.
Method:
Crush the cornflakes and mix with the seasonings and spread over a plate.
Cut the chicken into strips. (We like to use kitchen scissors).
Press the strips into the mixture with a fork. Flip and press again.
Place in a baking dish, sprayed with coconut cooking oil spray.
Bake for 10 - 12 minutes at 375.
You can also pan fry or deep fry these but they come out great baked.
We love to serve these with barbeque sauce or sweet chili sauce. They go great on top of a salad or with stir fry vegetables. This is a great recipe to make for a party because they are gluten free, dairy free, egg free and nut free and are a great offering for people with food allergies or sensitivities.
