Ingredients:
1 cup rolled oats
1/2 cup pumpkin puree
1/4 cup almond butter (or your preferred nut butter)
1/4 cup honey or maple syrup
1/4 cup ground flaxseed
1 tsp pumpkin spice (or a mix of cinnamon, nutmeg, and cloves)
1/2 cup chopped nuts (e.g., pecans, walnuts, or almonds)
1/4 cup dark chocolate chips (optional)
A pinch of salt
Directions:
In a large mixing bowl, combine the rolled oats, pumpkin puree, almond butter, honey or maple syrup, ground flaxseed, and pumpkin spice. Mix until all ingredients are well combined.
Fold in the chopped nuts and dark chocolate chips (if using). This will add a delightful crunch and sweetness to your energy bites.
Using your hands or a cookie scoop, form the mixture into bite-sized balls. If the mixture is too sticky, you can lightly wet your hands with water to make shaping easier.
Place the energy bites on a baking sheet lined with parchment paper and let them chill in the refrigerator for at least 30 minutes to set.
Once they've set, transfer your Pumpkin Energy Bites to an airtight container and store them in the fridge for a quick and healthy snack anytime you need an energy boost.
