Spring Gazpacho

Ingredients:
4 ripe tomatoes, chopped
1 cucumber, peeled and chopped
1 red bell pepper, seeded and chopped
1 small red onion, chopped
2 cloves garlic, minced
2 tablespoons olive oil

1/2 teaspoon paprika
Salt and pepper, to taste
2 cups vegetable broth
Instructions:
In a large bowl, combine the chopped tomatoes, cucumber, red bell pepper, red onion, and garlic.
Add in the olive oil, red wine vinegar, cumin, paprika, salt, and pepper.
Using an immersion blender or regular blender, blend the mixture until smooth.
Gradually add in the vegetable broth until desired consistency is reached.
Chill the soup in the refrigerator for at least 30 minutes before serving.
Garnish with additional chopped vegetables and a drizzle of olive oil, if desired.
