Fish Tacos

Ingredients:

  • 1 lb firm white fish (such as tilapia or cod)

  • 2 tablespoons olive oil

  • 2 teaspoons chili powder

  • 1/2 teaspoon ground cumin

  • Salt and pepper to taste

  • 8 small corn tortillas

  • 1 cup shredded purple cabbage

  • 1/2 cup diced tomatoes

  • 1/4 cup diced red onion

  • 1/4 cup chopped fresh cilantro

  • 1 avocado, sliced

  • Lime wedges, for serving

Instructions:

  1. Preheat the oven to 375°F.

  2. Place the fish in a baking dish and drizzle with olive oil.

  3. Sprinkle the chili powder, cumin, salt, and pepper over the fish and rub it in with your fingers.

  4. Bake the fish for 15-20 minutes or until it is cooked through and flaky.

  5. Meanwhile, warm the tortillas in the oven or on a griddle.

  6. Assemble the tacos by placing a piece of fish on each tortilla, followed by shredded cabbage, diced tomatoes, red onion, cilantro, and avocado slices.

  7. Serve with lime wedges on the side.
